It’s hard to beat Mexican food when you want something fresh, bright, and full of flavor. In West Liberty, KY, we have a few spots to choose from when we need a south-of-the-border meal. Pack the family into the Ford Explorer and check out one of these Mexican restaurants at some time this week: one’s right here in town, and the others are just a short drive away!
Mi Acapulco
You’ll find Mi Acapulco at 28 KY-191, and they’re open from 10:30am until 10pm most days. On Sundays, their hours are 11:30am until 9pm. This remarkable culinary hotspot in town is renowned for its excellent food and cordial staff. They can comfortably handle large groups, ensuring swift and welcoming service.
A notable highlight is their hefty fajita bowls, filled to the brim with flavor. Their Fajitas Molcajete, a blend of chicken, steak, and shrimp served with pico de gallo and queso blanco, offers incredible value at a great price. We also love their delightful cheesecake chimichanga, and their salsa, which we just can’t get enough of!
Mi Finca
Head over to 318 Main St in Campton for this unassuming but delicious spot. They’re open from 11am until 10pm most of the week and from noon until 9pm on Sunday. This family-oriented restaurant is loved for its friendly staff, tantalizing cuisine, and affordable prices. Mi Finca presents a clean and cozy ambiance, though parking is slightly limited so be prepared.
Their dinner menu is a testament to authentic Mexican cuisine, with the marina chimichanga emerging as a standout. This unique dish, filled with shrimp, scallops, and California vegetables, has such a fresh, flavorful taste that you’ll be dreaming about it again until you come back next time! They also offer a distinctively topped tostada, and the restaurant’s guacamole is particularly scrumptious.
Tres Agaves Mexican Restaurant
Our last suggestion is located at 11435 US-60 in Salt Lick, and they’re open from 11am until 10pm every day but Sunday when they’re open from noon until 9 pm. Since they’re situated conveniently between Morehead and Salt Lick on US 60, offer satisfying food, have commendable service, and charge reasonable prices, they’re definitely worth a quick road trip!
As a relatively new addition to the area, this place boasts an especially clean environment and enthusiastic, friendly staff. This expansive eatery can easily accommodate large gatherings. Among their recommended dishes are the salsa and chips, enchiladas, burrito supreme, queso chorizo dip, and queso bacon fries. Their proximity to Cave Run Lake makes this the perfect stop after a day outdoors, too.
